Seamus could see that Harry had written to Voldy, but not what, so presumably as soon as Hydra saw "to my loyal" from Harry, she reacted. (Hell, maybe even without reading it if she could see it!)

A thought: might Voldy have ordered the children killed because he realizes his new body is not as, ah, Gently Used, Very Good Condition as he intended? (and can we hope that Bella believes her curse unstoppable and so doesn't know a counter or even a palliative? Not that she's really the sort to palliate anyone, so to speak.)

I mean, even given ~24 hours, there's obviously still a lot of vengeful damage he can do on his way out, but I also wonder if it's occurred to him to check on his horcruxes recently. Or was the state of his new body enough to trigger his reaction, even without knowledge of the destruction of almost all of his horcruxes ...

I may not read tone entirely well in Desai but I can't shake the impression that she feels personally offended at some level that the schoolchildren she was looking forward to slaughtering can actually do something to defend themselves.

You'd also think that given she was their Defense teacher all year, she'd know their strengths and weaknesses inside-out - and understand exactly what skills she's imparted to said schoolchildren.
